Instructions:
1. Prepare the Filling:
- Mix the Ingredients: In a bowl, combine the grated cheese, shredded chicken (if using), sweetcorn, and diced bell pepper. Mix well.
2. Assemble the Quesadillas:
- Fill the Tortillas: Place a tortilla on a flat surface. Sprinkle a portion of the cheese mixture evenly over half of the tortilla, then fold the other half over to create a semi-circle. Repeat with the remaining tortillas.
3. Cook the Quesadillas:
- On the Stovetop: Heat a non-stick pan over medium heat and lightly brush with olive oil. Place one or two quesadillas in the pan (depending on the size of your pan) and cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- In the Air Fryer: Preheat the air fryer to 180°C (350°F). Place the quesadillas in the air fryer basket and cook for 4-5 minutes, flipping halfway through, until the tortillas are crispy and the cheese is melted.
4. Serve:
- Cut and Serve: Remove the quesadillas from the pan or air fryer, let them cool slightly, then cut them into wedges. Serve with sour cream and salsa on the side for dipping.
