Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Vegetables:
- Steam the broccoli florets and green peas until tender. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced zucchini to the skillet and cook for 5-7 minutes until tender.
- Blend the Sauce:
- In a blender or food processor, combine the spinach leaves, steamed broccoli, green peas, and vegetable broth. Blend until smooth to create a creamy green sauce.
- Combine Ingredients:
- Add the cooked pasta to the skillet with the sautéed zucchini. Pour the creamy green sauce over the pasta and mix well to ensure all the pasta is coated. Cook for an additional 2-3 minutes until heated through.
- Season and Serve:
- Season with salt and pepper to taste.
- Serve the pasta in bowls, topped with grated Parmesan cheese and fresh basil leaves if desired.
