Instructions:

  1. Prepare the Mixture:
    • In a large mixing bowl, combine the rolled oats, chopped nuts, dried fruits, chocolate chips (if using), cinnamon, and salt.
  2. Heat the Wet Ingredients:
    • In a small saucepan, heat the honey (or maple syrup) and almond butter (or peanut butter) over medium heat. Stir continuously until the mixture is smooth and well combined. Remove from heat and add the vanilla extract.
  3. Combine and Mix:
    • Pour the warm honey and almond butter mixture over the dry ingredients. Stir well until all the ingredients are evenly coated.
  4. Press into Pan:
    • Line an 20×20 cm / 8×8 inches baking pan with parchment paper. Pour the mixture into the pan and press it down firmly with a spatula or the back of a spoon to create an even layer.
  5. Chill and Set:
    • Place the pan in the refrigerator and let it chill for at least 2 hours, or until the mixture is firm and set.
  6. Cut and Serve:
    • Once set, lift the granola bars out of the pan using the parchment paper. Cut into rectangular bars or squares. Store in an airtight container in the refrigerator.
